Homemade Vegetable Stock Although the Paleo diet is certainly meat friendly, a vegetable stock is sometimes better for recipes that call for a light flavor. It’s also nice to have on hand for vegetarian family members or guests. Almost any vegetable scrap can go into a stock, so toss them into a resealable bag in the freezer as you cook other meals until you are ready to make your stock. You should avoid

garlic to the pan and cook, stirring often, for 2 to 3 minutes, or until the onions are just partly translucent. Increase the heat to high and carefully pour in the remaining 1/4 cup stock. Using a spatula or wooden spoon, quickly deglaze the pan by scraping up all of the brown bits. Add the spinach and mushrooms to the pan, and cook, stirring frequently, for 4 minutes. Layer the chicken in the slow cooker, top with the mushroom mixture, and pour the blended mixture over the top. Cover and cook

after each addition. On low speed, beat in the applesauce, followed by the almond milk and extract. Add the flour mixture and beat until just combined. Pour the batter into the prepared crock. Sprinkle the toasted almonds over the top. Cover and cook on high heat for 2 hours. Check doneness by inserting a toothpick. If it’s not done, continue cooking on high until a toothpick comes out clean. Allow the bread to cool, remove from the slow cooker, and slice. Wrap leftover bread in plastic wrap
